Healthier Wings and BBQ Beef Made Easy for Your Super Bowl Party

Just because we want to eat healthier, doesn't mean you have to give up the game day foods we love. We can still keep beef and wings on the menu - if we choose the right ingredients.

Mini Shredded BBQ Beef or Hickory Smoked Brisket Sandwiches
Heat up pre-cooked shredded BBQ beef or hickory smoked brisket and serve on dollar rolls with their all-natural BBQ sauce.

Mini Tostadas
Heat up pre-cooked plain shredded beef and mix with salsa and taco seasoning to taste. Put meat on round corn tortilla chips, top with cheese and tomato, serve with sour cream, guacamole and salsa.

Mini Hot Dogs
Cut their nitrate-, nitrite- and MSG-free hot dogs in half and cook as directed. Serve on mini buns with ketchup, mustard, relish and onion.

Wing Recipes:

Tropical Wings
1 lb. chicken wings
1/2 cup rice flour
1/2 cup finely shredded unsweetened coconut
1/2 tsp. garlic salt
1/4 tsp. cayenne pepper
1/2 cup buttermilk
1 Tbsp. honey
Coconut oil (for frying)

Cut tips from chicken wings and discard. Cut wings in half at joint, making two pieces.

Add the dry ingredients together and mix. Combine buttermilk and honey. Dip the cooked chicken in buttermilk then in coconut mixture.

Shallow fry in a cast iron skillet in coconut oil (or desired oil/fat) until golden brown. Drain.

(Or deep fry for 10-15 minutes in 360 degree oil but do not bake first)

Serve with mango or pineapple chutney.

Cheesy Baked Wings
1 lb. chicken wings
1 egg, beaten
6 Tbsp. grated or finely shredded Parmesan cheese
1 tsp. chopped parsley
1 tsp. oregano
1 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper

Cut tips from chicken wings and discard. Cut wings in half at joint, making two pieces.

Combine all dry ingredients, including cheese, in a small bowl and mix together.

Place a piece of parchment paper on the bottom of a baking dish. Place a wire rack on top of the paper.

Dip each piece of chicken into the egg and then into the cheese mixture. Put the chicken pieces on top of the rack in the dish.

Bake at 350 degrees for about 30 -35 minutes, until done. Easy clean-up: throw away the parchment paper!

Variation for Crispy Chicken Wings: omit parsley, oregano, and paprika. Add 4 Tbsp. of Italian bread crumbs to the dry ingredients. After dipping in egg and breading mixture, drizzle each wing with a small amount of butter.

Sweet and Spicy Wings
1 lb. chicken wings
1 tsp. orange zest
3 Tbsp. orange juice
4 Tbsp. pineapple juice
2 tsp. lime juice
1/2 tsp. garlic powder
1/4 tsp. ground ginger
1 Tbsp. sesame oil
1 Tbsp. Bragg’s liquid aminos (or soy sauce substitute)
3 Tbsp. cooking wine
2 Tbsp. honey
2 Tbsp. green onion, chopped
1/4 tsp. ground cayenne pepper (more or less to taste)
1/4 tsp. crushed red pepper flakes
Cilantro and sesame seeds for garnish

To bake: Place a piece of parchment paper on the bottom of a baking dish. Place a wire rack on top of the paper. Add chicken to the rack. Bake at 350 degrees for about 30-35 minutes, until done. Easy clean-up: throw away the parchment paper!

To fry: Deep fry in tallow (or any desired oil/fat) for about 10-15 minutes in 360 degree oil. Drain.

Add all ingredients, excluding chicken and garnish, into a saucepan. Bring to a boil, stirring occasionally. Reduce heat and simmer for about 15-18 minutes until the sauce is reduced by half.

Add cooked chicken to the sauce. Garnish with sesame seeds and cilantro.
